As soon as the surface of the biltong is open to the air, oxidation occurs.  This alters the pink to turn the biltong brown over time.  It does not change the tenderness, texture or flavour.  It’s just a natural reaction to the air.  If you want to see your biltong pink, buy it as a stick, in the same form that it would come out of the dryer, you can then slice it when you want, and the pinkness will still be there!

The white bits are unlikely to be mould due to the nature in which the product is produced.  The white bits are likely to be some of the salt used to marinate the product trying to rehydrate due to humidity.  This poses no danger to product consumption, but if you don’t like the look of it just wipe the price with a little cider vinegar and it should go away.

Depending on how you selected your biltong to be delivered to you e.g. paper bag, vacuum packed or pouch, will depend on how we suggest you keep the biltong.

The pouches will have a shelf life date on the back of the packets, once opened consume within 3 days.

 

The wetter the biltong, the faster it will deteriorate. (The UK low humidity levels like they do in South Africa, therefore we have to make sure we keep the biltong as dry as possible).  It can be stored outside a fridge for up to 3 days, or until eaten.  Alternatively keep in the fridge, or freeze if you have purchased a large quantity.

 

Should you choose to freeze the biltong, once it starts to defrost it will start to release moisture, we suggest wiping the excess water off the biltong, and mixing it up during the defrosting process.  The combination of moisture, oxygen and warmth is a dangerous combination.  Once fully defrosted, it’s good to eat.

 

Just make sure you keep your biltong as dry and well ventilated as you can all the time. Don’t store in sealed containers, biltong needs to breathe, and this method of storage give rise to the product sweating.

 

We manufacture our Biltong in a HACCP approved facility and a controlled environment, once you open the product the correct storage is up to you!

We can do pretty much any flavour you like.  Some of the currys like balti, tikka massalla, vindaloo or naga phal work really well, BBQ and chinese 5 spice are good too.

 

We are happy to accommodate any flavour you wish – but as a specific order, we would not look to cater for an order for less than 500g of biltong, and you should know that you would be waiting up to 5 days for your order to be ready, as we would be preparing this just for you!

It is safe to consume biltong in moderation during pregnancy. However, raw meat is at high risk of carrying bacteria or Listeria. So avoid eating the wetter biltong while expecting.
